I need a second to explain something to you. I've been here in Tennessee with all these southern girls and they've made comments about how dedicated I am to my health. Mind you, these were health and fitness coaches looking at me like I'm an alien! I was eating carrots and celery as snacks on our first day together. Then I ordered an omelette and fruit when everyone else had pancakes & waffles - we had just completed an hour and a half long CRAZY hard workout, so they were splurging. My how dedicated I am to my nutrition they said...
I'm so wedded to my health problems that I forget that the way I eat on a day to day basis is NOT normal in America. Sometimes I'm totally blind to that. Guys, I'm gluten free (not by choice), lactose intolerant, have fructose malabsorption (which means I can't eat apples and cherries without feeling ill), and most recently through more tests, uncovered that almonds, cashews, and red MEAT make me nauseous!!!! This is not normal.
If I could eat all the pancakes after a giant workout - I would! My health journey is one that comes from a state of "I don't want to be sick" not an "I LOVE veggies!" mantra. It's hard you guys. I have the extra reminder to eat right because I have to. I know for those who don't have dietary restrictions the changes can be harder. Gosh when I first had to go gluten free, I broke down and cried and felt like there was nothing left in the world for me to eat! I like food.
Two thoughts on this.
1. You need to know that I still eat junk food! I've learned how to pick and choose when I want to eat the junk and sometimes I struggle to make the right choice for my goals.
2. I need to take a step back and help you learn how to choose healthier options with me. I want to help you to change your thoughts about food. I want to share the benefits of healthy eating more frequently. I want to help YOU in your journey to live a happier, healthier life! I want to show you how you can make little changes to your diet that can have a long term positive effect on your health!
